Vacuum has a very important place in food and packaging industry. Vacuum has also an important role in food production and processing as well as packaging. Vacuum packaging evacuates air from the package prior to sealing. The intent is usually to remove oxygen from the container to extend the shelf life of the product. Furthermore, with flexible package forms, the volume of the contents and packages are reduced. Reduced oxygen levels, slows down the process of aerobic bacteria growth and thus, the typical shelf life can be extented up to 5 times more. The main part of the applications during food production and processings occur under vacuum conditions or with the assistance of vacuum process.
